Nkatenkwan, or Groundnut Soup

A rich and savory West African soup made with natural peanut butter, tomatoes, and seasoned stock. This Ghanaian classic is traditionally served with rice balls (omo tuo), fufu, or boiled yam.

Ingredients
  

  • ½ cup Natural peanut butter
  • 2 cup Chicken stock
  • 3 Tomatoes
  • 1 Onion
  • 1 Scotch bonnet
  • 1 tsp Tomato paste
  • 1 lb Chicken, beef, or goat
  • Salt, bouillon, garlic, and ginger to taste

Method
 

  1. Blend tomatoes, onion, and scotch bonnet. Boil down till thick
  2. Mix peanut butter with hot water until smooth.
  3. Combine everything in a pot. Add stock, meat, seasonings.
  4. Simmer for 30–40 mins till thick and flavorful.
  5. Serve with rice or swallow (fufu).
